How to Make Poha
Take a colander and add poha in it. Lightly wash the poha under running water for a few seconds. Allow the water to drain off the poha. Transfer the washed poha to a wide bowl. Add some salt and turmeric powder and mix everything around with a spoon so that the poha gets evenly coated with it.
Heat some oil in a skillet or pan. Add in the peanuts and fry them for a minute or so till they turn golden-brown and fragrant. They shouldn’t smell raw. Take care not to burn them. Now add in the mustard seeds and cumin seeds and allow them to sizzle. Toss in the urad daal and curry leaves and sauté for a minute.
Add the dices of boiled potato and fry them for a couple of minutes till they get some golden color.
Toss in the sliced onions and green chilies and sauté till the onions turn translucent. It’s time to add the diced tomatoes and a very little salt. Give it a quick stir.
Now in goes the garam masala, some sugar and lemon juice to taste. Add in the poha seasoned with salt and turmeric. Combine everything well. Allow it to cook on low heat for 5 minutes till the poha are hot. The raw smell of turmeric must wane away and it should become fragrant.
Get the skillet off the heat and garnish the poha with chopped cilantro. Serve steaming hot with your morning tea.
