best chocolate icing recipe

After a string of savory, spicy and delicious Indian recipes, here I am with a dessert recipe. Today I am sharing the recipe of chocolate cake, which is extremely easy to make and needs the basic baking ingredients. If you are a novice baker looking for easy cake recipes, you must add this one in your list for sure!

I have posted this chocolate cake recipe with step by step pictures for your easy understanding. Let us talk about measurements. I have used a measuring cup, where 1 cup = 200 ml. So please take care of what kind of measuring cup you are using while making this chocolate cake.

You will need two bowls, one for dry ingredients and another for wet ingredients. If you do not have glass bowls, you can always use steel bowls like I did. Do not take aluminum bowl because it causes the batter to blacken.

This recipe yields about 700-750 grams of delicious cake. Since I don’t have an electric oven available at the moment, I baked this cake on gas oven. I used a hand-held beater to make the batter. If you do not have a beater, you can simply use a ladle. Make sure you beat or mix the batter in one direction, preferably clockwise.

Let us see how to make this easy chocolate cake recipe.

How to Bake this Chocolate Cake in an Electric Oven?

  • If you want to bake the cake in the electric oven or OTG, preheat the oven at 180 degrees Celsius.
  • Place the cake pan containing the cake batter in the oven and bake it for 35 to 40 minutes 180 degrees Celsius.

How to Bake this Chocolate Cake in a Pressure Cooker?

  • Spread the sand directly inside the pressure cooker and preheat it.
  • Carefully place a small stand or a metal ring on the sand to place the cake pan on.
  • Place the cake pan containing the cake batter on the stand into the pressure cooker.
  • Remove the whistle / weight from the lid of the pressure cooker. Turn the flame on low. Close the pressure cooker and bake for 35 to 40 minutes.
Ingredients

(1 Cup = 200 ml)

  • Eggs – 5
  • Granulated sugar – 1 cup
  • Melted butter – 75 ml
  • Vanilla Essence – 1/2 tsp
  • Maida / Refined flour – 1 cup
  • Baking powder – 1 & 1/4 tbsp
  • Cocoa powder – 4 tbsp (You can add 2-3 tbsp if you want the flavor that is less intense)

How to Make Easy Chocolate Cake?

  • In one bowl, sift together the refined flour, baking powder and cocoa powder. Sift it again. Double sifting tends to enhance the texture of the batter. Keep it aside.

Let us quickly make the easy chocolate icing recipe.

For the Whipped Cream & Chocolate Icing

  • Heavy whipping cream (I used low-fat cream instead) – 300 ml
  • Dark chocolate – 75 grams, chopped to small pieces
  • Milk chocolate – 75 grams, chopped to small pieces

The easy chocolate icing is ready!
  • Take the whipping cream in a bowl and beat it till it becomes fluffy. This may take 3 to 4 minutes. Do not overdo or the cream will split.
  • Take the dark chocolate and milk chocolate in a bowl and melt them in the microwave on the lowest heat for 30 to 40 seconds. Stir around well with a spoon.
  • Again, if you do not have a microwave oven you can melt the chocolate using the double-boiler method. Heat some water in a deep pan and bring it to boil. Place the bowl containing the chocolate over the edge of the pan. The chocolate will melt from the heat of the steam coming up from the boiling water. Gently stir the chocolate with a spoon continuously as it melts. Make sure the base of the bowl containing the chocolate does not come in direct contact with the boiling water, else the chocolate will burn.
  • Allow the chocolate to cool down for a minute. Then add it the fluffed up whipped cream and fold the chocolate well into the cream with a light hand using a spatula.
  • Creamy and light chocolate icing is ready.

Assembling the Cake

  • Horizontally slice the cake from the center into two disc. Apply the icing on one disc of the cake. Place another cake disc over it. Apply the rest of the icing over and around the cake. Smoothen it out with a spatula. I chilled the cake in refrigerator so that the icing will stay better (because it’s low fat cream).
  • The cake is ready to be served. If you want, you can chill it in the refrigerator and serve it cold. It will taste great both ways.
