Soya granules or chunks are the rich source of proteins. Here is a soya bean kofte recipe for you. You must have tried meat kofta or mix veggie kofta but you must also try this version of veg kofta recipe. This is an easy veg kofta curry recipe.
Soya chunks are dry; they need to be soaked in water. Soya chunks contains plain flavor but absorbs sauce and curry well. In this recipe of veg kofta curry the masala are added in kofte as well as in the curry. Soya kofta curry ingredients are onion, coconut and curry leaves paste, ginger – garlic paste, red chilli powder, coriander powder, turmeric powder, garam masala powder and curd.
Curry leaves enhance the flavor and aroma of soya bean kofta curry. Here I have used garam masala powder of everest brand. You can use any brands garam masala powder or else you can make it at home. This is a new style of veg kofta gravy recipe. Add water to gravy as per your preference whether you want thick or thin gravy. Better go for thick or medium consistency gravy.
Soyabean ka kofta goes good with naan, paratha or with jeera rice. If you are serving this recipe with naan make sure that the gravy is of medium or thin consistency for the reason that naan absorbs gravy. I usually prefer medium consistency gravy.
This recipe of Soyabean Kofte yields 2 – 3 servings. For the purpose of measurement, 1 cup = 250ml.
Ingredients
For Soya chunks Kofte
- Soy chunks – 2 cups
- Ginger and garlic paste – 1 tsp
- Red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Turmeric powder – ¼ tsp
- Garam masala powder – 1 tsp
- Besan/gram flour – 4 tbsp
- Salt – To taste
- Oil – To fry
For Gravy
- Onion – 3, big size
- Coconut – 4 tbsp, powder
- Curry leaves –
- Ginger and garlic paste – 1 tbsp
- Red chilli powder – 1 tsp
- Coriander powder – 2 tsp
- Turmeric powder – ¼ tsp
- Garam masala powder – 1 tsp
- Bay leaf/ – 2
- Curd/dahi – 3 tbsp
- Salt – To taste
- Oil – 10 tbsp
How to make Soya bean chunks Kofta curry
- Take a cooking vessel and boil water into it. Place soya chunks in the boiling water
- Allow the soya chunks to boil for 5 minutes on medium flame.
- Drain the soya chunks with the help of strainer. Gently press the soya chunks between your palm to drain the excess water from it.
- Place the soya chunks into the grinder and coarsely grind it.
- Remove the coarsely grinded soya chunks into a plate.
- Now add red chilli powder, coriander powder, turmeric powder, garam masala powder, bean/gram flour and salt.
- Mix the kofta mixture well.
- Equally divide the kofta mixture and make medium size kofte/balls with your hand. Make sure that all the koftas/balls are made of equal size.
- Heat oil in a skillet. Place one by one kofte into the hot oil.
- Fry kofte on all the side equally at medium flame.
- When the kofte get golden brown colour remove it on the kitchen towel to drain excess oil. Koftes are ready.
- Place onion, coconut and curry leaves into a grinder and grind it.
- Make a smooth paste.
- Heat a skillet. Add oil to the skillet and place bay leaf into the hot oil.
- Now add the onion, coconut and curry leaves paste to the hot oil. At the same time add ginger and garlic paste to the hot oil. Mix it well.
- Allow the mixture to cook on the medium flame until it gets golden brown colour. Now add red chilli powder, turmeric powder, coriander powder and garam masala powder. Mix it well.
- Now add curd to the masala and mix them well. Cook for 1 minute on low flame.
- Allow it to cook on low flame. If the masala starts sticking to the bottom add 1 – 2 tbsp water to the masala and mix it well.
- When the masala starts leaving oil at the edges that means masala is ready.
- Add water to the masala. Mix it well. Add water as per your convenience whether to make thick gravy or to make thin gravy. Now increase the flame.
- Allow it to take a boil and reduce the flame to medium.
- Cook it for 5 minutes on low flame. Now the gravy/curry is ready. Off the flame and place the soyabean koftes into the gravy/curry.
- Soya chunks kofte curry is ready to serve. Serve hot with naan, parathas and jeera rice. Garnish the soyabean kofte with bay leaf and mint leaves.
