Salmon is one of the most popular fish in the world. These fish are delicious and loaded with healthy benefits. They are also a great source of omega 3 fatty acids. Salmon is one of my favorite fish because they are perfect baked, grilled, smoked and simmered in coconut milk.

Take note, this salmon recipe uses the local salmon or salmon found in the Philippines not the ones native to the Pacific Ocean or North Atlantic. So, don’t be surprised if the salmons were smaller. Nevertheless, these salmons are still delicate and taste great when cooked in coconut milk or fried.

Coconut milk is widely used in many dishes in the Philippines. In fact, many dishes used coconut milk such as ginataang tilapia, ginataang monggo, laing, chicken curry and more.

What is Coconut Milk?

Coconut milk is the liquid that you get from grated meat of coconut. When grated coconut infused with water and squeezed several times, you can get coconut milk. Coconut milk is only taken from grated meat of a brown coconut not the green ones. The greens ones are used for making buko salad and other sweet treats.

Coconut milk has high oil content and most of the fat is saturated fat. So, when you overcooked the coconut milk it turns into oil. By the way, coconut milk is very popular in the Philippines. You can buy them almost anywhere because of the abundance of coconut trees. Needless to say, they are very cheap, probably why many dishes are created with coconut milk.

One more thing, you can substitute salmon with other kinds of fish such as bangus (milkfish), galunggong and tilapia. Tilapia is the most popular substitute for paksiw sa gata.

Salmon in Coconut Milk

Ingredients:

  • 1 kl salmon
  • 1 small ginger, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 2 cups coconut milk
  • 2 pcs green chili or siling haba
  • Cooking oil
  • Salt and pepper to taste

How to Make Salmon in Coconut Milk

Direction:

In a large frying pan or skillet, sauté ginger, garlic and onion in oil over medium high heat.

Add the fish, stir and cook for 5 minutes.

Next, add the 2 cups coconut milk.

Stir and cook until the sauce thickens or become a bit oily. (I sometimes prefer this dish a bit oily so I cook the coconut milk longer than necessary.)

Add into the pan the green chili or siling haba. Season with salt and pepper to taste. Simmer for 2 minutes and remove from heat. Transfer to a serving plate.

Garnished with parsley and serve with steamed rice…
