Caldereta or kaldereta is a staple food of filipinos. Caldereta is a type of meat stew that is very popular in Luzon or tagalog region of the Philippines. The history of this dish is unknown, but since the word “kaldereta” is taken from a Spanish word, caldereta which means cooking pot or cauldron. So, it seems this dish has a Spanish origin. Anyway, I’m a lover of good food and beef caldereta are one of my favorite filipino food. I know, I know this recipe are about chicken and not beef, we will get to the chicken story part later.
Before I talk about my recipe, chicken caldereta let me explain first the reason why I have grown to love this tomato based stew.
I was pregnant with my eldest son when my husband introduced me to caldereta. My mom don’t cook caldereta and I prefer Japanese, western and Chinese food during my younger days. (I’m still young, mind you he he he) Anyway, we just moved into our little apartment and I don’t cook much, so he always buys caldereta from a nearby food stall. In short, I fell in love with beef caldereta at first bite.
I have been cooking caldereta ever since, but this is my first time to cook chicken caldereta. This meat stew dish is often made with beef or goat, and I know some people also used chicken as alternative. And since I wanted to introduce a new dish to my family, I decided to use chicken instead of beef. Using chicken is also cheaper because beef is very expensive in the Philippines. So, if you are looking for a new recipe that is also easy on the budget then chicken caldereta is the perfect dish.
There are many versions of caldereta, so don’t be surprised if my ingredients and directions to cook are different from other chicken caldereta on the internet. My recipe is different, because I don’t marinate the chicken in pineapple or soy sauce. I don’t think it is necessary to marinate chicken for the added flavor. But my version is also spicy. Chicken Caldereta Recipe
Ingredients:
- 1kl chicken, cut into desired portions
- Potatoes, quartered (if using small potatoes cut in half)
- Carrot
- 1 pack tomato sauce
- Liver spread (reno)
- 1 1/2 cup water
- Onion
- Garlic
- Chili
- Cooking Oil
- Cheese
- Salt and pepper
Directions:
In a large pan, heat oil over medium heat then sauté garlic and onion. Add chicken and cook until a bit.
Add the potatoes, carrots. Cook for 7 minutes or until chicken changed color.
Next, add liver spread and chili…
Pour into the pan water then let it cook for 8 minutes…
add the tomato sauce, stir and continue cooking for 5 minutes or until the sauce thickens. Lastly, add the cheese into the pan, cook for 2 minutes more.
Serve with rice and enjoy!
