Beans carrot thoran
Kerala style Carrot beans thoran recipe which is served along with side rice. It is a combination of carrot, beans and coconut. Carrot beans thoran is a vegetarian recipe which can be included in onam, vishu or other sadhya in Kerala.
Eating carrots helps to reduced cholesterol, prevention from heart attacks. Carrots are one of the most widely used and enjoyed vegetables in the world. Beans are high in antioxidants, fiber, protein, B vitamins, iron, magnesium, potassium, copper and zinc. Eating beans regularly may decrease the risk of diabetes, heart disease, colorectal cancer and helps with weight management.
- Beans carrot thoran
- Beans chopped 1 cup
- Carrot chopped ¾ cup
- Turmeric powder ½ teaspoon
- Cumin powder ¼ teaspoon
- Water ¾ cup
- Green chili 1
- Grated coconut ¼ cup
- Garlic 5 to 6 no.s
- Mustard seeds 1 teaspoon
- Dry red chili 2 no.s
- Oil 1 table spoon
- Salt to taste
In a kadai add chopped carrot, beans, turmeric powder and salt. Also add ¾ cup water.
Switch on the flame and cook for 1 minute in high flame. Once it starts boiling put flame in low.
Add grated coconut and salt in a mixer jar and just crush it, then keep it aside.
Add crushed coconut and combine well.
Add cumin powder and combine very carefully, cumin powder is optional. I would like the flavor.
Heat oil in a frying pan adds mustard seeds and allows it to splutter. Then curry leaves and dry red chili, fry for seconds. Then pour in to the carrot beans thoran.
