Well, tilapia are one of the inexpensive fish that are great for steaming and frying. I always buy tilapia at our local supermarket because my husband loves fish. But, I don’t want to serve just deep fried fish every time he wants fish for lunch or dinner. So, I decided to improve the tilapia by adding fermented black beans or douche in Chinese.
Fermented black beans are also known as tawsi, a popular Chinese seasoning. Tawsi gives added flavor to any vegetables, meat and fish. They are usually sold in supermarket and public markets, canned with brine or packed in plastic. I love tawsi because of its salty taste that when mixed with other seasoning, it gives the dish a certain aroma that will make you hungry.

Tilapia with Fermented Black Beans Recipe
Ingredients:
- 2 pcs large tilapia, cleaned and cut into two
- 1/1 teaspoon salt
- Onion spring
- Onion
- Garlic
- Ginger
- Chilis
- Fermented black beans
- 1 teaspoon salt
- 1 teaspoon soy sauce
- Cooking oil
- Pepper
- 1/2 cup water
Direction:
Clean the fish or ask your fish seller to clean it for you and cut into two pieces. Dry the tilapia with paper towel. Put the fish on a plate and season it with salt and pepper.
In a large wok or pan, heat the cooking oil over medium low heat. Put the tilapia carefully into the wok or pan.
Cooked until crisp or browned. (Do not put the fish if the cooking oil is not yet hot) Remove the fish and transfer to a serving dish or plate. Set aside.
In a separate pan or work, heat oil over medium low heat.
Throw in the onion, garlic and cook until onion is translucent, about 1 minute.
add the ginger and stir-fry for about 1 minute.
Add the black beans and let it cook for another minute.
Pour in the water, bring to a boil.
Reduce heat then add the chilis and onion spring. Simmer until the sauce thickens.
Remove from heat and pour the sauce over the tilapia, garnish with the remaining onion springs.
Serve with steamed rice or fried rice.
