Chicken afritada are great for lunch and dinner. The ingredients for cooking afritada are easy to buy. You don’t need a special seasoning or spices to create an extra ordinary dish for your family. By the way, don’t be surprised if my chicken afritada are different from what you know or seen online. In Philippines, chicken afritada are done differently in different regions. I have seen afritada with hotdogs or sausages. Some people also used pork instead of chicken.

Chicken Afritada Recipe
- ½ chicken cut into desired portions
- 1 pack tomato sauce
- Potatoes, peeled
- 1 medium onion
- 2 cloves garlic
- 1 Carrots
- 1 can green peas
- 1 Bay leaf
- ½ tablespoon salt
- Cooking oil
- 1 cup water
In a medium sized pan or pot, heat oil over medium high heat. Saute garlic and onion then add chicken into the pan.
Let chicken cooked for 3 minutes or until the meat changed color.
Add potatoes (I used small potatoes instead of the regular sized potatoes)
Next, throw carrots into the pot then pour the water. Cooked for 5 minutes or until the meat is tender.
add the tomato sauce and bay leaf.
Add green peas and seasoned with salt and peppercorn. Let it cooked until the sauce thickens.
Transfer to a serving dish and enjoy!
