Pazham Pori / Ripe Banana Fry

Pazham pori is a popular snack recipe in kerala, one of my favorite snacks.  The making of ripe banana fry is very simple and it may take very little time to prepare.

Ingredients Pazham Pori / Ripe Banana Fry

  1. Banana 4 no.s
  2. Maida ( all purpose flour )   1 ¼ cup
  3. Gram flour 2 table spoon
  4. Sugar 3 table spoon
  5. Turmeric powder ½  teaspoon
  6. Salt ¼ teaspoon
  7. Water ¾  cup
  8. Oil for deep frying

Method

Peal the banana off and cut it in to 2 or 3 slices lengthwise, according to the size of bananas.

In a bowl add all purpose flour, sugar, gram flour, turmeric powder and salt, mix well.

Add water in to the flour and make the batter. The batter is not too loose.

Heat oil in a deep frying pan, once its heated dip the banana slices in the batter and slowly added in to the oil. Put heat in medium flame.

Fry both sides until its crispy, remove it from the oil.

Serve it with hot tea or sulaimaani…

Stuffed Banana / Pazham Nirachath

Stuffed Banana / Pazham Nirachath is the another delicious snack recipe in Malabar cuisine of Kerala . This snack is mainly served in iftar parties. Stuffed banana is very simple to make and yummy and healthy food for kids.

Ingredients for making Stuffed banana / Pazham Nirachath

Ripe banana 4

  1. Grated coconut ½ cup
  2. Sugar 3 table spoon
  3. Raisins 10 no.s
  4. Ghee or oil 2 table spoon
  5. Cardamom powder 1 pinch
  6. Cumin powder 1 pinch
  7. Oil for deep frying

Method

Peel the bananas; make a long vertical slit in the center of the banana and another slit on 2 inch width, remove all the seeds. Use finger to make a proper opening. Keep it aside.

In a bowl add 2 table spoon all purpose flour and rice powder. Add water in it and make a tight batter.

Heat a ghee in a pan,  add raisins and grated coconut.  Fry t for 2 minutes in medium flame.

Add cardamom powder and cumin powder in it, sauté for 1 minute.

Switch off the flame and add sugar and mix well. Allow it to cool.

Now take the bananas and stuff the fillings tightly. Repeat the process for the rest of the bananas. Cover it with the banana pieces; seal the gap with maida batter.

Heat oil in a pan and deep fry all the stuffed bananas till it’s become golden color.

Banana cutlet / Ripe Banana Fritters

Banana cutlet / Ripe Banana Fritters is a very simple and yummy snack recipe and we can use it as a snack in iftar parties. Let’s see the recipe bellow with images.

Ingredients for making Banana cutlet / Ripe Banana Fritters

  1. Ripe bananas 3 numbers
  2. Grated coconut 1/ 4 cup
  3. Aval / beatern rice  ¼ cup
  4. Raisins 10 mumbers
  5. Cardamom powder 1 pinch

Method

Peal the bananas, smash it very well and keep it aside.

Heat a pan and dry roast aval/ beaten rice for 2 minutes, keep it aside to cool.

Put in a blender and make a fine powder.

Heat ghee in a pan, add raisins and grated coconut.  Fry t for 2 minutes in medium flame.

Add cardamom powder in it, sauté for 1 minute (no need of adding sugar if you want you can add 2 table spoon sugar). Switch off the flame and keep it aside to cool.

Pour this in to the smashed banana; also add fried coconut mixture in it.

Combine well and make dough. Take lemon size ball from the dough and make a pattern that you like.

Heat a frying pan and add 3 table spoon ghee or oil and shallow fry it on both sides.

Now it’s ready to serve.
