Lemon rice is a South Indian dish which can be easily prepared even when you are in a hurry. This can also be made with leftover rice. This recipe comes handy when you wake up late and want to prepare lunch. This is also best dish to pack for lunch or it is also good to pack during travel time. Since lemon is added, this rice dish will not get spoiled easily. My mother adds some grated vegetables also along with this and my kids love it. This dish is popular throughout South India though with different names : In Tamil Nadu it is called elumbicha sadam, in Kannada this version is called Chitranna. Now to the recipe..
Boiled rice – 1 ½ cups
Lemon juice – 3 tablespoon
Mustard seeds – 1 teaspoon
Hing – apinch
Curry leaves – few
Channa dal – 1 teaspoon
Green chilli – 1
Ginger – 1 small piece
Dry red chilly – 2
Peanuts – 2 tablespoon
Salt – to taste
Oil – 1 tablespoon
Technique
1. In a bowl, add boiled rice, lemon juice and salt. Mix nicely.
2. In another pan, heat oil, splutter mustard seeds. Then add hing, curry leaves, green chillies, red chillies, ginger, channa dal, peanuts . Saute nicely.
3. Add turmeric powder and sauté till the raw smell goes off.
4. Turn off the flame and allow it to cool
5. Once it is cooled, add it to the rice in the bowl, mix nicely. Garnish with coriander leaves.
6. Serve it hot with pappad.
