I have been eating red beans since I was a kid because my mom always cooked this dish. It is one of my dad’s favorite soup dishes. Unfortunately, I can’t cook red beans with pork hocks all the time because it takes a lot of time to prepare.
But when cravings for red beans hit me bad, I prepare the beans right away by soaking them in water overnight. I was told soaking the red beans in water helps soften the beans. Whether this is true or not, I just do it because it really takes time to softened red beans in a regular pot. But if you have a pressure cooker then prep time is greatly reduced to 30 minutes.
Here’s my red beans with pork hocks recipe, enjoy cooking!
Red Beans with Pork Hocks Recipe
Ingredients:
1 kilo pork hocks, cut into cubes
1 pack red beans
1 onion, quartered
1 cloves garlic, minced
5 cups water
Fish sauce
Direction:
In a large bowl, soak the red beans for 8 hours or overnight in water. In a large pot, place the red beans and water then bring to a boil over high heat. Once boiling reduced the heat and cover. Simmer for about 2 hour or until the beans are soft then set aside.
In another large pot, put the pork hocks, onion and season with salt. Bring to a boil then reduce heat, simmer over medium low heat for about 1 hour or till the pork have softened or tender.
Next, add the red beans into the pot. Simmer for 30 minutes to complete cooked the pork and beans and the sauce thickened a bit. Season with pepper and fish sauce and cook for 5 minutes more. Remove from heat and transfer to a serving bowl.
Serve hot with steamed rice.
P.s: If you have a pressure cooker you only need to cook the red beans for 20 to 25 minutes but if you don’t have one, it will take about 2 hours to soften the beans.
