Carrot thoran / carrot stir fry
The Carrot thoran / carrot stir fry is a simple and easy side dish for rice. In Kerala meals vegetable thoran / stir fry is an important one, the meals incomplete without a thoran. We can make many types of vegetable thoran like, beans cabbage spinach etc. This is the very easiest thoran recipe. This carrot thoran have little sweet and its have little spicy. If you want its spicier you can add green chili and adjust the quantity of grated coconut.

Ingredients Carrot thoran / carrot stir fry
- Carrot 2 large size
- Green chili 1 or 2
- Turmeric powder ½ teaspoon
- Salt to taste
- Water ½ cup
- Grated coconut ¼ cup
- Oil 2 table spoon
- Mustard seeds 1 teaspoon
Method
Wash the carrots well and peal it.
Chop the carrots in to very small square pieces and slice the green chili.
Heat a kadai, add chopped carrots and green chili in it.
Pour water, turmeric powder and salt to taste. Mix it well, check the salt.
Close it with a lid and cook it for 2 minutes in high flame. Then open the lid and put flame in simmer and allow it to cook.
After 2 to 3 minutes open the lid and add grated coconut.Gently mix it and again cook it, till the water completely evaporated from the carrots. Then remove it from the stove.
Heat oil in a small frying pan, add mustard seeds and allow it to splutter.Then add curry leaves, dry red chili and saute for seconds.
Pour it in to the cooked carrots and combine well.
The tasty sweet, spicy carrot thoran is ready to use. Enjoy cooking.
