- Mutton Mughlai – Shahi Mutton Or Mughlai Mutton Curry Recipe
Mutton Mughlai is a famous recipe in Indian cuisine. If you are looking for a rich mutton curry, this will be a correct choice. This mutton curry is creamy, rich, and very tasty one. Mutton cooked with onion, ginger, garlic and other spices along with cashew paste and tomato puree which gives this curry a unique flavour. For marinating Mutton
Termeric powder – half teaspoon
Garam masala – half teaspoon
Salt – to taste
Other ingredients for making Mutton Mughlai
mutton – 1/2 kg
Ghee – 1 tablespoon
Oil – 2 tablespoon
Cinnamon -1 small stick
Cloves – 4 to five
cardamom – 2 to 3
Fennel seeds 1/2 teaspoon
Cummin -1/4 teaspoon
Onion – 1 large
Ginger – 1 teaspoon
Garlic – 1 teaspoon
Green chilly – 2 chopped
Curry leaves – 2 spring
Chilly powder – 2 teaspoon
Termeric powder – 1/2 teaspoon
Coriander powder -1 teaspoon
Garam masala – 1/2 teaspoon
Tomato – 2 large pureed
Cashew paste – 3 tablespoon
Salt -to taste
Coriander leaves – for garnishing
Method of making
Wah mutton and cut it into medium size pieces, add termeric powder, garam masala and salt into it and mix it well
Transfer the mutton pieces into a cooker and pressure cook it for four to five whistle,turn off the heat and let the stame go by itself after that open it and keep aside
Heat oil and ghee in a pan Put cardamom, cinnamon, cloves, fennel seeds and geera seeds let it sizzle

After few minutes add chilly powder, turmeric powder, coriander powder and garam masala mix it well with the other ingredients in the pan
When the masala lost it’s raw smell add tomato puree and mix it
Pour the mutton stock water, which we get after cooking the mutton in the pressure cooker. Check the salt and add enough cook it till oil separates
Now add the cooked mutton into the gravey and mix it well.
Add cashew paste to the curry and mix well, cook in low flame for few minutes.
Turn off the heat and add chopped coriander leaves into it.
