Kadai-Chicken North Indian Style

Today I am sharing a North Indian Recipe Kadai Chicken

Kadai Chicken is a very famous non-veg delight in restaurants. This spicy & yummy North Indian recipe tastes juicy with distinct flavor of bell pepper.

In this recipe, the chicken is cooked in a red gravy with whole spices. This dish takes its real color & flavor by cooking in a thick bottomed Wok called  Kadhai  in India.

It tastes great with Indian Naan,Rotti,Paratha Chapati or even with plain rice.

Making kadai chicken at home is really easy..!

Ingredients:

  • Chicken-1/2kg

     To marinate:

  • Red chilly pwd   –  2 tsp
  • Turmeric pwd    –  1/2 tsp
  • Pepper pwd – 1 tsp
  • Gara Masala-1/2 tsp
  • Ginger garlic paste   – 1tsp
  • Lemon juice   –      1tsp
  • Salt  -to taste

To prepare Gravy:

  • Oil                                – 3 to 4 tbsp
  • Bay leaf                        – 1
  • Cardamom                    – 2
  • Cloves                          – 4
  • Cinnamon                     – 1
  • Star anise                     – 1
  • Onion                           – 2
  • Ginger garlic paste        – 1 tsp
  • Coriander pwd               – 1 ½ tsp
  • Cumin pwd                    – ½ tsp
  • Tomato                         – 2
  • Red chilly pwd              – 2 tsp
  • Chopped capsicum       – ¼ cup
  • Coriander leaves
  • Salt to taste

  1. Prepare marinate with the ingredients given above.
  2. Add chicken and mix well in the marinate
  3. Marinate for 30 minutes.
  4. Heat oil in a thick bottomed wok /kadai.
  5. Add whole garam masala spices
  6. Sauté till it crackles.
  7. Add finely chopped onion
  8. Fry till onion turns light brown.
  9. Add ginger garlic paste and sauté till raw smell disappears. ( approx 1 min )
  10. Add coriander pwd and cumin pwd.
  11. Saute further for 2 mins.
  12. Mash tomatoes and add it.
  13. Mix well and cook closed for 2 mins.
  14. Once the oil separates out, add red chilly pwd, cook till the masala thickens.
  15. Combine and add marinated chicken pieces.
  16. Mix properly in medium flame, so that all the pieces are coated well in the gravy.
  17. Add 1 ½ cup water, cover and cook for 10 mins
  18. Stir in between.
  19. Cook for another 5 to 7 mins
  20. Once the chicken is three-fourth done, add chopped capsicum / bell pepper, garam masala & salt.
  21. Stir well and cook for another 5 to10 mins in low flame. ( till the chicken is completely cooked).
  22. Turn off flame and sprinkle freshly chopped coriander leaves.
  23. Yummy Kadai Chicken is ready.
  24. This tastes great with roti / plain rice / chapathi or with paratha

                            Serve it in hot and Enjoy…
