Chakka Pradaman For Vishu

Jack fruit pudding is one of the most delicious mouth watering kheer,usually prepares for Vishu Sadyas, as it is available in summer. This is the traditional sweet of Keralites. If you preserve jack fruit jam or varattiyathu, can use to make pradaman for onam sadya. Jack fruit is always healthy as it contains fiber ,vitamins and minerals.

Ingredients

  • Jack fruit-20 bulbs
  • Jaggery-150 gm
  • Cashew-15 nos
  • Coconut milk thin-2 cup
  • Coconut milk thick-1 cup
  • Ghee-3 tbsp
  • Cardamom-4 nos
  • Dry ginger-1 tsp

How to Make Chakka Pradaman

  • Separate the bulbs from the fruit and remove the seed.

  • Cut into small pieces.

  • Cook it with some water. Drain the water and keep it separate.

  • Grind the cooked fruit into smooth paste.

  • Make jaggery syrup.

  • Keep a pan on low flame and put ghee. Roast cashews. Add the stock

  • Add the pulp . Combine well.

  • Add jaggery syrup and stir well. Don’t allow to stick.

  • When it is semithick add thin coconut milk.

  • Stir between. Add thick milk, cardamom and dry ginger.

  • Put off the flame. Stir well.

  • Decorate with roasted cashews. Now ready to serve.
